But Chef Shimamoto’s mastery goes far beyond that iconic hybrid. His dedication to authentic ramen craft culminated in his acclaimed restaurant, Ramen Shack. Covered by Tasty in 2019 on how he handcrafted 400 bowls of ramen from scratch, receiving over 6 million views on YouTube. The restaurant was a massive critical hit, earning high praise and a significant feature in the Los Angeles Times, solidifying Keizo’s reputation as one of the industry's top ramen masters.
