At the heart of this bowl are Chef Keizo's famously thin, handcrafted noodles, designed to perfectly capture every drop of broth.

This is paired with a delicious centerpiece: smoked chashu. Expertly smoked low and slow for three hours, then cooked sous-vide for five more in a special tare, this chashu is impossibly tender with a rich, smoky finish.
